Good CMRR, input low-pass filtering and careful grounding is a must. Get some literature such as the excellent books by Horowitz/Hill or search on manufacturer's websites such as TI or Analog Devices for details. I have no affiliation with either company. If you are after a reliable and affordable, quick path to a successful circuit, look for integrated Thermocouple amplifiers. These include cold junction compensation and other useful features One example out of many: http://www.analog.com/media/en/technical-documentation/data-sheets/AD8494_8495_8496_8497.pdf Recommended reading: Section "Theory of Operation", which starts at page 11 in the datasheet above.
