Help to select wardware

Good day, I want to take the signal from a load cell and be able to graph it, additionally I want to be able to monitor the value of 2 temperatures, and I want to be able to start the process through a relay output, and finish it by time, what would be the hardware that best would adapt.

Please share the datasheet of your load cell.  Also, what is your sampling rate requirement?

You could potentially use a MCC USB-2408-2AO or USB-2416-4AO with the DASYLab software application.
