Analog Discovery 2 Logic Analyzer with 8v signal

I'm interested in buying an AD2 for a bunch of projects, and my 'excuse' is to read the output on a Resol VBus solar controller, which has an Ip8v output (https://esphome.io/components/vbus.html).

Can I just use a voltage divider to safely read the signal?

Yes, you may use a voltage divider to safely read the signal with the Analog Discovery 2; the site you linked has a suggested voltage divider schematic for converting the 8 V signal down to 3.3 V as well: https://esphome.io/components/vbus.html#hardware-connection.
