At -100°C, a typical accuracy error of +/-1% would be reasonable. You will also need to add the error of your thermocouple as well. The thermocouple vendor typically provides that information. If your tests will always be at a given temperature, with the same USB-2408-2AO module, and the same thermocouples, then you can measure and create your own custom table.
