I use the Spectrum Analyzer's FFT for a variety of tasks and I really like the high resolution capabilities of Analog Discovery 2. If I set the BINs of the FFT something big like 4.097k or 8.193k the problem is that I can't set my display to have as many columns on the chart to show them all.

No. The WaveForms application does not do averaging in plots, does not hide information, it draws vertical lines (min/max) for samples falling in the same display x-column. You actually get a thick band for nosy signals.
The Scope interface by default stores averages samples (can be adjusted under each channel gear drop-down) and also collects lower resolution noise (min/max) samples which are indicated by a transparent band. Here the normal samples are als
