The photomultiplier tube and photodiode output a current signal, so an external signal conditioning circuit ("tweaking" as you called it) would be required prior to any connections to the MCC 118.  It would be up to the end-user to design in a signal conditioner.

Hi :) So, if I were able to design the conditioning circuit, it could work with the MCC 118? Would it be difficult/expensive to include this conditioner?

The PMT is an RCA Photomultiplier Tube 931B 

The photodiode is most likely going to be the Advanced Photonix 100-12-22-021

Hi! I know the data sheet says any Raspberry pi will work with the MCC 118, but I was just wondering if one version worked better than the others? Also, is there a specific RAM requirement for the Raspberry pi, would the 1 GB Raspberry Pi 4 work, or would I need the 4 GB Raspberry Pi 4? 
 

Any help would be appreciated :)
